According to investigations and studies, grilled food with barbecue grills can be used with barbecue sauce. This is because barbecue sauce contains some beneficial ingredients, which can prevent the production of carcinogens and also help prevent high-temperature heating of food from harm to the human body.
Grilled food soaked in barbecue sauce or smeared can greatly reduce the content of carcinogens. Because the grilling temperature may exceed 200°C, proteins may be carcinogenic 'heterocyclic amines' at high temperatures. The longer the roasting time, the more carcinogens will be produced. If the meat is scorched and the local temperature is close to 300°C, the fat in the meat will also produce a large amount of carcinogens such as benzopyrene. Some ingredients contained in barbecue sauce can absorb heat when heated, and protect the meat in the middle from being affected by high temperature.
